		<description>While this is a nice recipe, please don&#039;t use peanut butter, use roasted chopped peanuts.  So easy just buy raw peanuts, dry roast in a skillet over medium heat-keep the peanuts moving just until starting to get golden.  Remove from pan to prevent burning, chop and use these instead of peanut butter which has stabilizers, preservatives, and such.  I have traveled Thailand learning to cook reginal dishes and NOT one Thai cook uses peanut butter whether a five star chef, home cook, or street food cook.

Fresh Kaffir Lime Leaves (bai Magrot) add so much to Thai dishes both fragrance and taste.  You can grow a tree in a pot and bring in to over winter in cold zones.  Often these are grafted to hardy root stocks.  I bought my 6+ trees from Four Winds Growers-yes they ship.</description>

There is indeed a lot of prep involved, but I am sure you will agree that the work is well worth the final product.  I find that there is something especially satisfying about putting together food like this at home.  The sauce is so good that I too have wondered about other practical applications for it. I had this for dinner tonight.  Well I should say four of us did.  The Thai curry sauce turned out great.  A lot of prep, but who cares.  I truely believe this was better than at our local Thai place.

I used both creamy peanut butter and some ground nuts.  I love thick currys, like some of the Indian ones.  I&#039;ll try this next time with chicken.  Also going to use the curry sauce in with fish.
